Fishing off of Cape Cod you are bound to catch one of two fish: Striped Bass or Bluefish. And as much as we all love Bluefish we also know it's a fish made for the smoker (if this is what your reeling in then you've got to check out Food On The Foods prep).
Yet as long as my family as been catching Stripers we've never been able to figure out how to prepare fillets. Whether on the grill or in the oven the toughness of the fish never tendered and the flavor got lost amongst herbs and seasonings. So after our latest catch this past summer I fished out my Great-grandfather's old fishing logs and found his traditional recipe scribbled on the cover page. It is as follows:
4 part mayo
1 part dijon mustard
salt to taste
cayenne to tast
Preheat broiler. Place fillets on pan. Sprinkle with salt and cayenne pepper. Mix mayo and mustard in a separate bowl and coat fillets. Place lemon slices on top of each. Place pan in broiler until tops turn light shade of brown.
Simple? Yes. Delicious? Try it and you tell me ;-)
